Quick bean and courgette salad
Bush bean, butter bean and courgette salad
I try to plan my raised beds so I do not have a huge amount of one vegetable at the same time.
That does mean I sometimes have a few butter beans here, a few bush beans there and one small courgette. That is what I enjoy: combining things and experimenting. This delicious salad was the result.
It is very quick and easy to make because most of it cooks together in a single saucepan.
You will need:
- 1 small courgette
- 1 handful of butter beans
- 1 handful of bush beans
- ¼ red onion
- 1 teaspoon truffle oil
- 1 sprig of tarragon
- freshly ground pepper
Method:
Trim the ends from the beans. Cook them in salted water for 3 minutes, then taste one: they should be almost tender but still have some bite.
Add the thinly sliced courgette and, if you like, a sprig of curry plant.
Cook everything for another minute, then drain.
Add the very thinly sliced red onion, truffle oil, freshly ground pepper and tarragon.
You can use a good olive oil instead of truffle oil.
Finish with a few cornflower or borage flowers.
