Courgette hummus

An unusual hummus made with courgette. Ideal if you prefer not to eat beans or chickpeas but still enjoy hummus.

Hummus is a delicious Middle Eastern purée. It is eaten there for breakfast, with the main meal or as a starter with flatbread.

Traditional hummus is made with chickpeas, but if you find those difficult to digest, this recipe by Silvia Hietbrink is an excellent alternative.

Courgette hummus

I made my hummus with courgette. Ideal when you are overwhelmed by courgettes.

It is also a good alternative if your diet excludes beans or chickpeas, or if you find them difficult to digest.

What I used:

  • 200 g courgette

  • 80 ml tahini (sesame paste)

  • 2 garlic cloves

  • 1 tablespoon olive oil

  • 1 teaspoon paprika

  • juice of half a lemon

Method:

Put everything in a food processor and blend until smooth.

If you like some heat, add chilli powder to taste. Ground cumin works well too.

That is it. Ready in 10 minutes.

Hummus is delicious on toast, bread or slices of courgette.
