Cucumber mash with courgette and plenty of chives

An easy, quick and delicious summer recipe for all those cucumbers and courgettes in August.

This recipe originally came from my grandmother. She did not add courgette or chives, but she did use a generous splash of salad dressing. Very tasty, though not quite as nutritious.

Saskia therefore made a lighter version. Handy, because it also uses up a surplus of courgettes and chives.

How to make it:


For 2 people:
  • 5 snack cucumbers (or 4, or 6)
  • 1 small courgette
  • 3 potatoes
  • 1 large bunch of chives
  • 150 g organic minced meat, or a meat substitute

Method (20 minutes):

  1. Cut the vegetables into pieces and finely snip the chives. There is no need to peel them; simply wash them first.
  2. Cook the potatoes for 10 minutes in a saucepan with a shallow layer of water.
  3. Add the cucumber, then add the courgette 5 minutes later. Cook for another 3 to 5 minutes. Do not leave it too long or it will turn to mush.
  4. Meanwhile, brown the minced meat in a frying pan. You can add an onion and some mushrooms too, although we had run out.
  5. Drain off some of the water, leaving enough to keep the mixture moist, then stir in the mince and chives. The more chives, the better.
  6. Season with salt and pepper, and it is ready.

Trust me: it tastes much better than it looks.
