These special deep-purple carrots usually have a white or pale yellow centre. They look beautiful and make a fun alternative to ordinary orange carrots.

The flavour is a little less sweet than our orange carrots, and they are slightly less juicy and crunchy. But their striking colour more than makes up for that.

The roots are almost white or pale yellow when they are still small, but the older they get, the more purple they become. The centre often stays white-yellow, though there are differences between individual carrots.

Do not be surprised if an orange carrot suddenly appears too.

Are purple carrots healthy?

All carrots contain vitamins A, B1, B2, B6, and C, plus beta-carotene, which the body converts into vitamin A. They also contain minerals such as calcium and potassium, and plenty of fibre.

Do not forget the leaves: they contain vitamins and minerals too, including calcium, potassium, vitamin C, and vitamin K.

Purple carrots also contain anthocyanins: natural pigments and antioxidants also found in blueberries, blackberries, purple cabbage, and purple potatoes.

In short: purple carrots are colourful, nutritious, and a lovely way to add variety to your harvest.

What do you need to grow purple carrots?

Besides the seeds, you need:
  • one 30 x 30 cm square
  • MM-Mix
  • a spot with at least 6 to 8 hours of sunlight per day

How do you sow and grow purple carrots?

Purple carrot is an easy vegetable for the Makkelijke Moestuin. You sow it directly in a square, thin out the seedlings once, and keep the mix evenly moist.

In the Makkelijke Moestuin app, this variety has 5 levels. Below is a quick overview.

Level 1: sowing purple carrots

Loosen the mix in a front or middle square and make it nice and airy. Then sow as follows:
  • make 16 small holes in the square, no deeper than 1 cm
  • place 2 to 3 seeds in each hole
  • carefully close the holes again
Depending on the weather and the time of year, you should see the first green shoots after about 12 days.

Level 2: purple carrot seedlings

Once the first seedlings appear, you know things are going well. They will not all come up at the same time, but after another 10 days most of them should be visible.

Keep watering regularly. Carrot seedlings are still very fragile at this stage, so make sure the mix never dries out completely.

Level 3: thin out the purple carrots

When most seedlings are up, thin them out. Leave the strongest seedling in each spot and remove the rest.

You should end up with 16 carrot plants in the square. That gives every carrot enough room to grow.

Level 4: caring for your purple carrot plants

Keep the mix slightly moist, especially in dry weather. Other than that, purple carrots do not need much attention.

Remove any dead or yellow leaves now and then. Easy.

Level 5: harvesting purple carrots

You can usually harvest the first purple carrots 10 to 14 weeks after sowing.

To see whether they are ready, brush a little mix away around the base of a plant. Is the top of the root about as thick as your finger? Then you can pull it out.

Leave the smaller carrots for later. They will keep growing for a while.

The next levels

After the first harvest, keep checking the square. Pull out the carrots that are ready and leave the smaller ones to grow on.

Once the square is empty, refresh the mix and use it for the next vegetable.

How can you use purple carrots?

You can use purple carrots in the same way as orange carrots: raw, grated into salads, roasted, steamed, or sliced into soups and stews.

The colour is their party trick. Slice them thinly or grate them through a salad and they immediately make the dish look special.
